Shepherd’s Pie

Ingredients

  • 1 big white onion, minced
  • 1-2 carrots, diced
  • 2-4 cloves garlic, minced
  • Olive oil
  • 1 lb beef
  • Salt & pepper
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Red wine vinegar
  • 4 tbsp tomato paste or 1 small can
  • 1/2 tsp Rosemary
  • 1/2 tsp Thyme
  • 1 cup broth (beef, chicken, vegetable, doesn’t matter)
  • Peas & corn, frozen or canned (frozen preferred)
  • Mashed potatoes

Instructions

  1. In Big Pan, saute onion, garlic, carrot until soft
  2. Push vegetables to the edges of the pan to make a ring, add beef to middle. Season w/ salt & pepper
  3. When beef is browned, mix in with vegetables
  4. Add Worcestershire sauce, red wine vinegar, tomato paste, rosemary and thyme. Combine thoroughly.
  5. Add broth & frozen veg
  6. Simmer until thickened
  7. In baking dish, put down meat mixture, then mashed potato, top with cheese
  8. Bake at 375 for 20-30 mins or until top is golden brown, let sit 10 mins before serving
