Shepherd’s Pie
Ingredients
- 1 big white onion, minced
- 1-2 carrots, diced
- 2-4 cloves garlic, minced
- Olive oil
- 1 lb beef
- Salt & pepper
- 1 tbsp Worcestershire sauce
- 1 tbsp Red wine vinegar
- 4 tbsp tomato paste or 1 small can
- 1/2 tsp Rosemary
- 1/2 tsp Thyme
- 1 cup broth (beef, chicken, vegetable, doesn’t matter)
- Peas & corn, frozen or canned (frozen preferred)
- Mashed potatoes
Instructions
- In Big Pan, saute onion, garlic, carrot until soft
- Push vegetables to the edges of the pan to make a ring, add beef to middle. Season w/ salt & pepper
- When beef is browned, mix in with vegetables
- Add Worcestershire sauce, red wine vinegar, tomato paste, rosemary and thyme. Combine thoroughly.
- Add broth & frozen veg
- Simmer until thickened
- In baking dish, put down meat mixture, then mashed potato, top with cheese
- Bake at 375 for 20-30 mins or until top is golden brown, let sit 10 mins before serving
